Ingredients

  • 1.5 kg (3.3 lbs) pork shoulder or lamb leg, cut into 4cm cubes
  • 3 large onions, thinly sliced
  • 100 ml (1/2 cup) vegetable oil
  • 50 ml (1/4 cup) white wine vinegar or lemon juice
  • 5 garlic cloves, minced
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • 2 tsp salt
  • Fresh herbs (cilantro, parsley) for serving
  • Lemon wedges for serving
  • Metal or soaked wooden skewers

Cooking Instructions

  1. 1Cut meat into uniform 4cm (1.5") cubes, trimming excess fat.
  2. 2In large bowl, combine sliced onions, oil, vinegar, garlic, and all spices.
  3. 3Add meat, massage marinade into each piece thoroughly.
  4. 4Cover and refrigerate for 6-24 hours (longer is better), mixing occasionally.
  5. 5Remove meat from refrigerator 30 minutes before grilling.
  6. 6Prepare charcoal grill or wood fire until coals are white-hot.
  7. 7Thread meat onto skewers, leaving small space between pieces.
  8. 8Save marinated onions for grilling separately.
  9. 9Grill over hot coals, turning every 3-4 minutes.
  10. 10Total cooking time 15-20 minutes until charred outside but juicy inside.
  11. 11During last few minutes, grill the marinated onions on skewers or grill basket.
  12. 12Let rest 5 minutes before serving with grilled onions, fresh herbs, and lemon.
